Sausage Pilaf

Ingredients
- 1 lb. hot pork sausage
- 1 C. chopped celery
- 1/2 C. chopped onion
- 1/2 C. chopped bell pepper
- 1 C. cream of mushroom soup
- 3 C. cooked rice
- 1/2 C. chopped cashews or peanuts (optional)
Directions
Brown sausage, drain. Add celery onion, and peper. Cook 3 to 5 minutes. Stir in soup and rice. Pour into a 1-qt. casserole. Cover. Bake 20 minutes at 350 degrees. Remove from oven, sprinkle nuts on top and return to oven uncovered for 10 more minutes.
