For an even easier variation, this is quicker with boil-in-a-bag or minute rice.

Ingredients

  • 1 lb. hot pork sausage
  • 1 C. chopped celery
  • 1/2 C. chopped onion
  • 1/2 C. chopped bell pepper
  • 1 C. cream of mushroom soup
  • 3 C. cooked rice
  • 1/2 C. chopped cashews or peanuts (optional)

Directions

Brown sausage, drain. Add celery onion, and peper. Cook 3 to 5 minutes. Stir in soup and rice. Pour into a 1-qt. casserole. Cover. Bake 20 minutes at 350 degrees. Remove from oven, sprinkle nuts on top and return to oven uncovered for 10 more minutes.
