Sausage Rice

Ingredients
- 3 C. beef broth
- 1 med. onion, chopped
- 2 Tbs. chopped parsley
- 2 Tbs. olive oil
- 12 oz. Italian pork sausage, casings removed
- 1 C. peeled, seeded and chopped tomatoes
- salt
- pepper
- 1 1/2 C. medium-grain rice
- 1/2 C. freshly grated parmesan cheese
Directions
In a wide heavy saucepan, cook onion and parsley in oil until onion is softened, 5 minutes. Add sausage meat and cook until sausage is slightly browned, 15 minutes. Stir in the tomatoes and salt and pepper to taste. Add broth and bring to a simmer. Stir in the rice. Cover and cook for another 10 minutes. Add water if mixture is too dry. Cover and cook for another 8 minutes. Remove pan from heat. Stir in cheese. Serve.
