Sausage Rice Casserole

This casserole is fantastic and for anyone who enjoys sausage, mushrooms, green pepper and wild rice.

Ingredients

  • 1 lb. bulk sausage
  • 1 can mushrooms
  • 1 can cream of mushroom soup (undiluted)
  • 1 can cream of chicken soup (undiluted)
  • 1 C. chopped green pepper
  • 1 medium box wild rice

Directions

Brown sausage and drain grease. Cook rice according to box directions. Mix all ingredients together in a crock pot and let it simmer on low for at least four hours.

  • Wild rice is not a rice, it is a grain. A medium sized box is usually 4 oz. Cook the rice first other wise it will not have enough time to cook in the crock pot in four hours. I usually cook my 4 oz box for an hour on the stove top. Otherwise, put it in the crock pot with 4 times the water and let cook overnight on low. If I'm buying in bulk, it can take up to an hour and a half on the stove top..

  • First of all, wild rice is completely different than white or brown! It generally DOES come in boxes, and since boxes come in sized, Medium means just that. I don't know how many ounces, however, go to a grocery store, the boxes will surely say! Are you all buying yours from a bin in one of those "organic markets" maybe?? However, you must follow the proper directions on the box, WILD RICE COOKS DIFFIRANTELY, (sp) IT'S HARDER, THAT'S WHY!!?! Get out your most basic cookbook, that will

  • Reading the rest of the ingredients I would use 2 cups of uncooked rice for a start. Also this could be baked in the oven, covered, at 350 for 30 minutes.
