  • 16 oz. Mostaccioli noodles
  • 3 C. fresh broccoli
  • 2 C. fresh red peppers, chopped
  • 10 garlic gloves
  • Olive oil
  • ½ C. grated Parmesan
  • Chopped parsley
  • Pinch of salt
  • Black pepper

Chop up the red peppers into diced pieces and chop broccoli. Heat one large non-stick skillet for 3 minutes. Toss in peppers and broccoli and stir frequently until broccoli is tender, about 10 minutes. In a second pot, fill it with water and place in noodles and a sprinkle of salt. Cook noodles until tender and drain. Return noodles to pot, heat off. For the garlic sauce, in a third saucepan, sauté the garlic in olive oil until slightly brown. Toss in the cooked pasta, cooked vegetables, Parmesan cheese, black pepper to taste, and parsley. Mix altogether and serve.
