This delicious dinner recipe is easy and quick to prepare something certainly untraditional but satisfying.

  • 4 Chicken breast pounded flat.
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 onion minced or pureed
  • 1 Red pepper julienned
  • 1 Green pepper, julienned
  • 1/2 lb Ham julienned
  • 1 tomato julienned
  • 1/4 C. dry sherry
  • 1/2 tsp. Thyme, marjoram

Flattened chicken breast and season with salt and pepper. Sauté the chicken in the oil until done. In the same oil, sauté onions, garlic, and peppers. Add the ham, tomatoes and olives. Deglaze with the sherry. Add stock and seasoning, reduce sauce until thick. Serve with rice or pasta.
