  • 4 boneless chicken breasts, butterfly sliced
  • 2 T. olive oil
  • Salt and pepper to taste
  • 1 lb. fresh green beans
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 4 slices bacon

Preheat oven to 425 degrees. In a skillet, heat 1 tablespoon of oil and sauté garlic, green beans, and carrots until tender. Season generously with salt and pepper and fill the center of the butterfly cuts. Fold chicken back over, brush with remaining oil, and wrap with bacon. Place on a baking dish and roast for 20 to 25 minutes until bacon is crispy and chicken is cooked through.
