  • 2 lbs Fresh Garbanzo Beans, shelled (omit if not available
  • 5 Pickling Cucumbers, sliced into medium-width rounds
  • 3 Zucchinis, sliced
  • ½ a Medium Size Red Onion, sliced into rings
  • 2 Red Bell Peppers, sliced into strips
  • 8 Green Onions, sliced into ½" sections
  • 6 Tomatoes, sliced into 1" sections
  • You Can Also Add Sliced Carrots or Black Olives If Desired
  • Dressing:
  • ½ cup Olive Oil
  • ¼ cup Red Wine Vinegar
  • 1½ Tbsp Lemon Juice
  • Crumbled Mild Goat Cheese With Herbs* (or Feta With Herbs, for folks who like it) to taste
  • * Add Dried Oregano To Taste If Using Plain Cheese Without Herbs

Put veggies into a large pan. Begin sautéing them unit tender. In a small bowl, add the oil, vinegar, and lemon juice and whisk until mixed. Pour the dressing over the sautéed veggies and toss to mix. Sprinkle goat cheese or feta on top of each serving.
