This mushroom and green bean dish is simply seasoned with basil and salt and pepper but it is an excellent side for any dinner party or family meal! The mushrooms and beans compliment each other perfectly.

  • 3 cups trimmed green beans
  • 1 ½ cups sliced mushroom caps
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 tablespoons chopped basil
  • 3 tablespoons vegetable stock
  • Salt and pepper

Heat the oil over medium-high heat and add the mushrooms. Add a pinch of salt and sauté for 4 minutes. Add the vegetable stock and green beans next. Lower the heat and cover the skillet. Cook for 4 minutes. Stir in the butter, add the basil, and sprinkle with pepper.
