  • 3 T. soy sauce
  • 1 T. sesame oil
  • ½ tsp. ginger powder
  • Salt and pepper to taste
  • 2 T. olive oil
  • 1 lb. shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • ½ red bell pepper, chopped
  • 1 onion, diced
  • 1 C. frozen peas and carrots blend
  • 3 C. rice, cooked
  • 2 green onions, thinly sliced

In a bowl, whisk together soy sauce, sesame oil, ginger, salt, and pepper; set aside. In a skillet, heat oil and cook shrimp over medium high heat for 3 to 4 minutes until pink and set aside. In the same skillet, sauté garlic, red bell pepper, and onion until fragrant and softened. Stir in peas and carrots, sautéing for an additional 4 to 5 minutes. In a large bowl, combine rice, shrimp, sautéed vegetables, and sauce.
