Ingredients

  • 3 C. gnocchi
  • 1 C. cherry tomatoes, halved
  • 3 cloves garlic, minced
  • ½ red onion, sliced
  • 1 C. fresh basil leaves
  • 1 zucchini, chopped
  • 2 T. thyme
  • Salt and pepper to taste
  • ¼ C. olive oil
  • 2 tsp. white wine vinegar

Directions

Add gnocchi to boiling water and drain after gnocchi rises to the top of the pot; set aside. Whisk together olive oil, vinegar, thyme, salt, and pepper in a small bowl. In a large skillet, sauté garlic, tomatoes, onion, and zucchini. Combine gnocchi and sautéed blend. Add basil, toss everything with vinaigrette, and serve.
