Ingredients

  • 1 C. quinoa, cooked
  • ½ cucumber, thinly sliced
  • 3 large tomatoes, chopped
  • ½ red onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 T. olive oil, divided
  • 2 T. red wine vinegar
  • ½ C. baby arugula

In a large skillet, heat 1 tablespoon of oil and sauté onion and garlic until fragrant. Add in cucumber and tomatoes; cook until cucumbers are tender. Transfer to a large bowl. Pour in cooked quinoa, 1 tablespoon of oil, red wine vinegar, and season with salt and pepper. Toss well to evenly coat. Stir in arugula and serve.
