Whip up this yummy scramble that is packed full of tender sauteed veggies. Make these eggs as tame or as spicy as you want with red pepper flakes or even some added hot sauce on the side.

  • 2 T. olive oil
  • 2 cloves garlic, minced
  • 1 C. mushrooms, sliced
  • ½ red bell pepper, chopped
  • 2 Roma tomatoes, chopped
  • 2 C. baby spinach leaves
  • 8 large eggs, beaten
  • 1 ½ tsp. red pepper flakes
  • Salt and pepper to taste

In a large skillet, heat olive oil and sauté garlic, mushrooms, and bell pepper for about 8 minutes. Add in tomatoes and spinach. Cook for another 2 minutes or until spinach begins to wilt slightly. Reduce your heat to medium and pour in eggs. Season well with salt, pepper, and red pepper flakes. Cook to desired firmness and serve.
