Sauteed Artichokes

Ingredients
- 1 1/2 lbs. artichokes
- 1/4 C. olive oil
- 1 tsp. finely chopped garlic
- salt
- freshly ground pepper
- 1 Tbs. finely chopped parsley
Directions
Pare the artichokes with a potato peeler. Drop them into boiling salted water. Begin with the largest pieces and work your way down. As the water comes to a boil again, remove artichokes and drain. Cut them into very thin slices, about 1/4-inch thick. In a skillet, saute the chopped garlic in the olive oil over medium heat. When the garlic has colored lightly, add the artichokes and stir. Add salt, pepper and chopped parsley. Stir again. Turn artichokes a few times while cooking. Taste and add salt, if needed. Serve hot.
