  • 3 small heads broccoli
  • 4 large carrots
  • 10 Cremini mushrooms
  • 1 C. peas
  • 3 heads garlic
  • 1 in. fresh ginger
  • 3 Tbs. rice vinegar
  • 3 Tbs. soy sauce
  • 2 -3 drops of sesame oil
  • 1 Tbs. apricot preserves
  • 1 Tbs. sesame seeds

Prepare by slicing or chopping the vegetables, garlic and ginger. In a small bowl, mix the rice vinegar, sesame oil, soy sauce, and apricot preserves. Stir with fork. Put the sesame seeds in a small pan and toast for about 1 minute on medium high heat. Keep moving the pan so that the seeds don't burn. In a large saute pan, drizzle oil and heat. Add the broccoli and carrots and saute for about 5 minutes. Add the ginger, mushrooms, and peas, and saute for 7 minutes. Add the carlic and saute for another 5 minutes. Add the sauce and saute until the broccoli and carrots are cooked al dente. Sprinkle the vegetables with the toasted sesame seeds.
