If you would like to enjoy a warm, cheesy sandwich now and still feel good about it later, this gourmet recipe will give you just what you're looking for. This sandwich's layers of eggplant, yellow squash, and sundried tomatoes have been sprinkled with chewy goat cheese chunks.

  • 1/2 C. Olive Oil
  • 1 tsp. Minced Garlic
  • 1/2 tsp. Sea Salt
  • 1/2 tsp. Ground Black Pepper
  • 1 Medium Yellow Squash, thickly sliced
  • 1 Medium Eggplant, thickly sliced
  • 1/2 C. Sun-Dried Tomatoes, roughly chopped
  • 1/2 C. Whole Green Olives
  • 8 slices Multigrain Bread, toasted
  • 1/2 C. Crumbled Goat Cheese

In a small bowl, combine the olive oil, garlic, salt, and pepper. Place 1 tablespoon of the mixture in a medium mixing bowl. Add the squash, eggplant, sundried tomatoes, and olives, and toss to coat. Pour the vegetable mixture into a medium skillet over medium-high heat, and sauté until vegetable slices are tender. Spread the remaining olive oil mixture onto one side of each slice of bread. Layer even amounts of sautéed vegetables atop 4 slices of bread, and sprinkle with goat cheese. Place the remaining 4 slices of bread oiled-side-down onto the sandwiches, pressing gently to help them stick together.
