  • 6 Large Sweet Potatoes
  • 1 Medium Onion, finely chopped
  • 4 Fresh Jalapeno Peppers, seeded and finely chopped
  • ¼ cup Butter
  • 2 Eggs, beaten
  • ½ cup Mayonnaise
  • 1 can Cream of Chicken Soup
  • 1 cup Shredded Cheddar Cheese
  • 3 Tbsp Butter

Heat oven to 400 degrees and bake sweet potatoes for approximately 1 hour, or until soft. Meanwhile, saute the jalpenos and onions in butter, and beat eggs in separate mixing bowl. Peel skins after potatoes have cooled. Combine sauteed onion, jalapenos, sweet potatoes, eggs, mayonnaise, soup and cheese, mixing until well-blended. Reduce oven temperature to 350 degrees and pour into casserole dish. Dab with 3 tbsp butter and bake for 45-55 min.
