You know what they say, everything tastes better with bacon, and this mouthwatering strata is no exception. Who wouldn't want a big helping of a cheesy breakfast casserole filled with crisp bacon, peppery arugula and tons of cheese?

  • 1 loaf crusty bread cut into bit-sized cubes
  • 1 1/2 C. thick cut bacon fried and cut into pieces
  • 1 C. arugula sautéed
  • 1 C. Monterey Jack cheese
  • 8 eggs
  • 2 C. milk
  • salt and pepper
  • cooking spray

Preheat oven to 350º F.

In a medium sized bowl mix 4 eggs, milk, salt and pepper to taste together well. Coat casserole dish or skillet with cooking spray and line the bottom of the pan with bread cubes bacon and arugula. Pour egg mixture over casserole dish, then crack remaining eggs on top. Sprinkle cheese on top and put in oven.

Let bake for 35-40 minutes or until eggs have cooked to likeness and golden brown.

Serve warm.
