A sandwich stuffed with classic breakfast foods is perfect to fill you up and get you going in the morning. Layers of scrambled eggs and crispy bacon sit between two grilled halves of your favorite kind of bagel drizzled in maple syrup.

  • 2 Bagels of Choice, sliced widthwise
  • 2 Tbs. Maple Syrup
  • 3 Tbs. Butter, divided
  • 2 Large Eggs
  • 1/8 C. Milk
  • Sea Salt, to taste
  • Ground Black Pepper, to taste
  • 2 slices Bacon
  • 2 Lettuce Leaves

Place the bagel halves cut-side-up on a clean, flat surface and drizzle each half with 1 1/2 teaspoons of maple syrup. Press bagel halves back together. Melt 2 tablespoons of butter in a large skillet over medium-high heat. Place the bagels in the skillet and firmly press them down with a spatula. Cook until one side of the bagel turns golden brown, then flip and continue cooking, again pressing down with the spatula, until the other side turns golden brown. Set bagels aside. In a medium bowl, whisk together the eggs and milk. Stir in salt and pepper to taste. Melt the remaining butter in a medium skillet over medium-high heat. Add the eggs and cook, using a spatula to stir and fold as eggs start to set, until the eggs have thickened and no visible liquid eggs remain. Place the bacon on a microwaveable plate and warm for 1 minute until crispy. Layer atop one half of each bagel, in order, one lettuce leaf, half of the scrambled eggs, and one strip of bacon. Top with the other half of the bagel, gently pressing down to help sandwiches stick together.
