Ingredients

  • 2 lb. beef stew meat
  • 2 T. all-purpose flour
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 3 T. olive oil, divided
  • 2 C. chopped onion
  • 3 C. baby carrots
  • 2 stalks celery, sliced
  • 4 garlic cloves, minced
  • 1 C. beef broth
  • 1 C. red wine
  • 2 tsp. coarse salt
  • 1/2 tsp. pepper
  • 2 sprigs fresh thyme
  • 1 sprig fresh rosemary
  • 2 bay leaves
  • 1/2 C. water
  • 3 T. all-purpose flour
  • 2 C. cherry tomatoes, halved

Directions

Place the beef, flour, salt, and pepper in a large bowl. Toss to combine. Heat oil in a large skillet over medium heat. Add steak and sauté until brown. Stir in the onion, carrot, celery, and garlic. Continue to sauté for a few minutes. Transfer mixture to your crock pot. Stir in remaining ingredients except for the water, three tablespoons of flour, and tomatoes. Cover and cook on a low setting for three hours. In a bowl, whisk together water, flour, and tomatoes. Add mixture to crock pot and stir. Cook, uncovered, for another 30 minutes, or until sauce has thickened. Remove bay leaves before serving.
