  • 1 C. flour
  • 1 T. sugar
  • 1/4 tsp. salt
  • 1 1/2 C. milk
  • 4 eggs
  • 3 T. melted butter
  • 1/4 C. diced onion
  • 1 egg, beaten
  • 1/4 C. diced ham
  • 1/4 C. diced tomato

In a blender, blend together the flour, sugar, salt, milk, 4 eggs and melted butter
for 30 seconds. Allow this to sit for 15 minutes. In a skillet over high heat, lightly grease with butter, then pour 1/3 C. of the batter on to the hot surface. Lift and tilt the pan to complete cover the bottom in the batter and cook until the crepe begins to brown. Flip the crepe and cook for another minute, and remove. Continue until the batter is gone. In another pan, cook the beaten egg to a scramble, then add in the veggies and ham. Cook for a few minutes, then fill each crepe with this mixture, folding the corners around it.
