  • 1 lb. breakfast sausage
  • 2 C. bisquick
  • 1 C. cornmeal
  • 3 eggs
  • 1 3/4 C. milk
  • 1/4 C. red bell pepper, chopped
  • 1/2 C. finely minced onion
  • 1/2 tsp. salt
  • pepper to taste
  • 1/4 tsp. garlic powder
  • 1 1/2 C. shredded cheddar cheese

Line muffin tins with paper liners, and set aside. Fry, crumble and drain sausage. Preheat oven to 375°F. Mix together bisquick, cornmeal, eggs, garlic powder and milk. Add drained sausage, diced peppers, onions and cheese. Stir well. Ladle the filling into the prepared muffin tins, filling almost to top. Bake for 11 to 15 minutes. Allow to cool completely.
