This is one of the best soup recipes I've ever made! This simple recipes creates a smooth and rich broccoli cheddar soup that tastes even better than the versions served at your favorite restaurants.

  • 6 T. butter
  • 1/3 C. flour
  • 1/4 tsp. garlic powder
  • 1/4 tsp. ground nutmeg
  • 1/8 tsp. ground white pepper
  • 1 can chicken broth (13 1/2 oz.)
  • 1 C. milk
  • 3 C. broccoli florets
  • 1 C. whipping cream
  • 1/4 tsp. Worcestershire sauce
  • 1 C. shredded Cheddar cheese
  • 1/2 C. shredded Havarti cheese
  • 1/2 C. shredded Swiss cheese

Using a 3-quart sauce pan, melt the butter over low heat. Whisk in flour and seasonings, and mix until combined. Slowly pour in the broth and milk, while continuing to whisk the mixture. Once the soup has thickened, stir in broccoli and allow it to simmer for about 10 minutes. Remove the mixture from head and stir in the whipping cream and Worcestershire sauce. Add all three cheeses and continue to stir until melted. Serve with a fresh baguette if desired.
