  • 2 tbs. extra virgin olive oil
  • 1 1/2 lb. skin-on, bone-in chicken thighs
  • 1 yellow onion, chopped
  • 1 (14.5 oz.) can diced tomatoes, with juice
  • 1/4 C. water
  • 1 tsp. fresh basil, chopped
  • 1/2 tsp. freshly ground black pepper
  • 1/2 tsp. garlic powder
  • 1/2 tsp. fresh oregano, chopped
  • 1/2 tsp. kosher salt

In a large frying pan, warm olive oil over medium-high heat. Add chicken to pan. Cook for 5 minutes on each side or until chicken is well browned. Stir in onions and cook for 5 minutes or until tender.

Add tomatoes, water, basil, ground pepper, garlic powder, oregano and salt to skillet. Mix ingredients well.

Bring mixture to a boil. Decrease heat to low. Cover and simmer for 5 minutes or until chicken is no longer pink at the center. Serve warm.
