  • 1 small head cauliflower, 3" pieces
  • 1 tbsp. fresh parsley, roughly chopped
  • 1 tsp. garlic powder
  • 2 tbsp. lemon juice
  • 1/4 cup olive oil
  • 2 tbsp. chives, chopped
  • Salt and pepper to taste

Preheat oven to 425 degrees. Mix together oil, garlic powder, salt and pepper to taste in a small bowl. Divide the cauliflower and spread them evenly across a baking tray. Drizzle the oil mixture evenly over the cauliflower.
Use hands to mix the cauliflower together until thoroughly coated with spices.
Spread the cauliflower evenly across the sheet and sprinkle a little more salt and pepper over the top. Roast in oven for about 50 minutes until a nice golden brown. Make sure to switch the tray levels half way through roasting. Garnish with some fresh chopped parsley or nuts and serve warm.
