Savory Cheddar Ale Soup With Kielbasa

Ingredients
- 2 T. plus 1 tsp. vegetable oil, divided
- 1 medium yellow onion, chopped
- 2 cloves garlic cloves, chopped
- 6 T. unsalted butter
- 1/2 C. all-purpose flour
- 3 C low-sodium chicken broth
- 12 oz. lager
- 1/2 C heavy cream
- 8 oz. mild yellow cheddar, grated
- Kosher salt and freshly ground black pepper
- 1 lb. link kielbasa sausage, cut into 6-8 pieces

In a large pot, heat 2 T. vegetable oil. Add onion and cook until soft, occasionally stirring. Add garlic and stir constantly until fragrant. Add butter, stirring until melted. Add flour and stir constantly until golden brown coloring. Whisk in chicken broth, lager, and heavy cream. While whisking occasionally, bring to a boil and then reduce to a simmer until mixture thickens. Reduce to low heat and slowly whisk in cheese. Cover for 10 minutes. Put soup in a blender and puree until smooth, seasoning with salt and pepper. Heat the remaining vegetable oil in a large skillet over medium heat. Cook sausage pieces until brown and crisp. Ladle soup into bowls and top with sausage.
