Savory Chicken and Jasmine Mushroom Rice

If you aren't a fan of drumsticks, you can use chicken breasts, or emit the chicken entirely for a savory side dish. The jasmine rice adds extra flavor to the dish you don't usually get from regular or brown rice. Everyone will love this simple crockpot casserole!

Ingredients

  • 8 chicken drumsticks
  • 1 (10 1/4 oz.) can cream of mushroom soup
  • 2 (4 oz. each) cans sliced mushrooms, drained
  • 2 C. milk
  • 1 clove garlic, minced
  • 2 Tbs. onion, minced
  • 3/4 C. jasmine rice
  • 1/4 C. grated Parmesan cheese
  • 2 tsp. salt
  • 1 tsp. pepper
  • 1 Tbs. oil

Directions

Heat the oil in a skillet and brown the chicken on all sides over medium-high heat. Remove to a platter and set aside. In the same skillet, brown the mushrooms, onions, and garlic. Remove from the heat and add in the soup. Add the milk and stir until the mixture is smooth. Add in the salt, pepper, and cheese. Stir in the rice.

Put the soup and rice mixture into the crockpot and put the drumsticks on top of the rice. Cook on high for 3 to 4 hours or until the chicken is cooked through and the rice is tender and creamy.
