  • 2 cans cream of chicken soup
  • 1 ½ C. uncooked brown rice rinsed
  • 2 T. seasoning mix of your choice
  • 1 C. water
  • 1 lb. boneless skinless chicken breasts chopped into cubes
  • 2 C. green peas
  • 2 C. Italian bread crumbs

Preheat the oven to 375°F. Generously grease small casserole dish. Heat the soup in a saucepan over medium heat and let simmer over low heat. In a small bowl, whisk the flour and seasonings, then mix in the milk until smooth and thick. Pour the flour and milk mixture into a different saucepan over low heat and stir continuously. Let simmer and stir occasionally until the mixture is smooth and thick. In a large bowl, combine the uncooked rice, condensed soup, a tablespoon seasoning, peas and water. Pour into prepared casserole dish and arrange chicken pieces over the top and sprinkle with the remaining seasoning and bread crumbs. Cover with foil and bake for 45 minutes. Remove foil and let bake for an additional 30-45 minutes or until rice and chicken are cooked through and top is lightly browned. Allow to cool for 15 minutes. Serve with a dollop of sour cream or shredded cheese.
