  • 2 C. white rice
  • 4 C. water
  • 2/3 C. soy sauce
  • 1/4 C. sugar
  • 1 T. cornstarch
  • 1 T. minced fresh ginger
  • 1 T. minced garlic
  • 1/4 tsp. red pepper flakes
  • 1 egg
  • 3 chicken breast halves
  • 1 T. sesame oil
  • 1 green bell pepper, cut into matchsticks
  • 1 can sliced water chestnuts, drained
  • 1 onion, chopped

Bring rice and water to a boil in a pot over high heat. Combine soy sauce, sugar, and corn starch in a bowl. Then mix ginger, garlic, and red pepper into sauce. Use this mixture to marinate the chicken. In an oiled skillet cook the bell pepper, water chestnuts, egg, and onion for 5 minutes. Place marinated chicken on the same skillet and cook for 3 minutes per side. Serve with rice.
