  • Meatballs:
  • 1 T. unsalted butter
  • 1 ½ tsp. sea salt
  • ¼ tsp. grated nutmeg
  • ¼ tsp. ground allspice
  • ¼ C. minced yellow onion
  • 2/3 lb. ground veal
  • 2/3 lb. ground beef
  • 2/3 lb. ground pork
  • 1 ½ C. fresh bread crumbs
  • ¾ C. milk
  • 1 egg
  • Olive oil
  • Fresh dill
  • Pepper
  • Cranberry Sauce:
  • 1 lb. fresh cranberries
  • ½ C. sugar
  • ¼ C. water
  • Lemon zest

In a large skillet heat up and melt 1 T. butter. Add in the onion and remaining butter. Remove from heat once onions caramelized. In a bowl, combine the ground meats, breadcrumbs, salt, pepper, allspice, milk, nutmeg and egg. Add in the caramelized onions. Preheat the oven to 425 degrees. Line 2 baking sheets with parchment paper and brush them with olive oil. Roll out the meat mixture into balls. Place them onto the baking sheets. Bake for 15-20 minutes. Make the cranberry sauce by simmering all of the ingredients into a saucepan. Serve the meatballs and cranberry sauce together. Serve and enjoy.
