  • 1 loaf of crusty bread cut into bite-sized chunks
  • 1 C. chopped fennel
  • 1 C. diced sweet onion
  • 1 small green onion diced
  • 2 C. cheddar cheese, shredded
  • 8 eggs
  • 2 C. milk
  • 2 tsp. oregano
  • 2 tsp. basil
  • salt and pepper to taste
  • 1 T. olive oil
  • non-stick cooking spray

Preheat oven to 350º F.

In a large bowl combine eggs, milk, oregano, basil, whisk until fully incorporated. In a medium skillet over medium high heat, pour olive oil in pan and sauté fennel and onions. Let cook until veggies are almost translucent. Set aside. Coat casserole dish with cooking spray and in alternating layers place the bread chunks and sautéed veggies in casserole dish. Season with salt and pepper to taste, and sprinkle cheese on top.

Place in oven and let bake for 35-45 minutes, or until eggs have and sides are brown.

Serve warm
