Ingredients
- 1 pkg. spaghetti, cooked according to package directions and drained
- 2 lg. tomatoes, coarsely chopped
- 1/2 C. green onions, chopped
- 1/2 C. cilantro, chopped
- 1/3 C. white onions, chopped
- 2 C. California Black Ripe Olives (1 cup whole, 1 cup sliced)
- 1 cucumber, chopped
- 1 C. sweet corn (drained if using canned corn)
- 1 C. black beans, drained
- 1/2 C. ranch dressing
- 1 C. Italian dressing
- 1 Tbs. salt
- 1 Tbs. black pepper
- 1 tsp. cumin
- 1 tsp. cayenne pepper
Directions
Add cooked pasta to a large mixing bowl and stir in ranch and Italian dressing. Add California Black Ripe Olives, tomatoes, onions, cucumbers, cilantro, corn, black beans, salt, black pepper, cumin, and cayenne pepper. Mix all the ingredients thoroughly. Pour fiesta pasta salad on a decorative platter, and serve.
