Split pea soup traditionally has a fresh flavor but this recipe incorporates the bold flavor of ham. The hamhock is deliciously homemade and perfectly simmered. It may take awhile to make the broth but it is so worth it. This split pea soup will become your new go-to.

  • Ham Hock Broth
  • 3 qt. chicken stock
  • Ham bone, with excess ham meat
  • 1 C. celery, chopped
  • 1 C. carrots, chopped
  • 1 C. yellow onion, chopped
  • 5 cloves, wrapped in cheesecloth
  • 4 sprigs thyme
  • 3 bay leaves
  • The Soup
  • 1 ½ C. split peas
  • 1 C. diced carrots
  • ⅔ C. onions, diced
  • ⅔ C. celery, diced
  • 3 Tbs. butter
  • 3 Tbs. flour
  • Salt and pepper
  • ½ C. chopped ham and croutons for garnish

Combine all of the ingredients for the hamhock broth and simmer for four hours with the lid slightly off. In a large pot, melt the butter and saute the carrots, onions, and celery. After 5 minutes add the flour and continue to stir. Add 2 quarts of the stock and the split peas. Let it simmer for another 45 minutes. Use an immersion blender (or puree in a blender) to puree the soup. Let is simmer for another 10 minutes on low and serve with the ham and croutons.
