  • 1 onion, diced
  • 1/3 C. Italian parsley, chopped
  • 3 eggs, divided
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 C. breadcrumbs
  • ½ C. grated Parmesan cheese
  • 16 oz. ground beef
  • 12 C. chicken broth
  • 1 lb. pasta

In a large bowl, combine onion, parsley, 1 egg, garlic, salt, pepper, and breadcrumbs. Use your hands to mix in beef and Parmesan until mixture is well combined. Shape into meatballs. In a large pot, bring broth to a boil, add meatballs and pasta, reduce heat, and simmer for 10 to 12 minutes until meatballs are cooked through. In a bowl, whisk together remaining eggs and a bit of Parmesan cheese. Drizzle into soup and stir with a fork so strings of egg disperse evenly. Serve hot.
