  • Meat Sauce:
  • 1 Tbs. olive oil
  • 1 medium onion, diced
  • 1 medium bell pepper, diced
  • 2 tsp. garlic, minced
  • 1 lb. ground pork
  • 1 (28-oz.) can tomato sauce
  • 1 (9-oz.) can tomato paste
  • 1 tsp. dried basil leaves
  • 1/2 tsp. dried oregano leaves
  • Salt and pepper to taste
  • Lasagna:
  • 15 lasagna noodles, cooked
  • 28-oz container small-curd cottage cheese
  • 1 egg, beaten
  • 2 Tbs. fresh parsley, chopped
  • 1 C. Parmesan cheese, grated
  • 4 C. Mozzarella cheese, grated

In a large Dutch oven, heat olive oil. Add chopped onions and chopped bell pepper and cook until softened. Then add garlic and red pepper flakes. Cook and stir for about 1 minute. Crumble ground pork over onion mixture. Chop and cook until meat is no longer pink. Add tomatoes, tomato sauce, tomato paste, dried basil, dried oregano. Mix well. Season with salt and pepper. Bring sauce to boil. Reduce heat and simmer, covered, for about 5 hours.

When sauce is ready, preheat oven to 375 degrees F. Cook lasagna noodles according to package direction and drain. Place cottage cheese in bowl. Add beaten egg and dried parsley. Stir well. In a 9-by-13-inch pan. Spread a thin layer meat sauce on bottom. Layer noodles across pan and then layer with meat sauce and cottage cheese mixture between noodles. Sprinkle with a little Parmesan cheese. Cover with foil and bake for 30 minutes. Take out from oven and sprinkle with remaining cheese. Bake uncovered for another 30 minutes or until cheese is a golden brown.
