  • 2 8-oz. pkg. cream cheese, softened
  • 1 T. butter
  • 1/2 C. lobster meat, chopped
  • 1 C. canned artichokes, drained and chopped
  • 1/4 C. plus 1 T. shredded Parmesan cheese
  • 1/4 C. sour cream
  • 1/4 C. diced tomatoes
  • 2 T. crumbled goat cheese

Preheat your broiler to a medium setting. Place cream cheese in a large bowl and set aside. In a large skillet, melt butter over medium heat. Add lobster meat and cook for three minutes. Carefully stir in artichokes and cook for another minute. Remove from heat and combine with cream cheese. Sprinkle with Parmesan. Use a hand mixer and blend until fully incorporated. Gradually stir in sour cream. Transfer mixture to a baking dish and broil for two minutes. Sprinkle with goat cheese and broil for an additional minute. Garnish with tomatoes and serve.
