  • 2 lb. boneless skin-on pork belly, cut in half
  • 8 cloves garlic, smashed
  • 2 bay leaves
  • 1 T. black peppercorns
  • 1/2 C. soy sauce
  • coarse salt
  • canola oil
  • rice vinegar

In a large pot, place pork belly, skin side-down, and add enough water to cover the meat. Add garlic, bay leaves, peppercorns, and soy sauce. Bring mixture to a boil over medium heat, reduce heat, and cover. Let cook for one hour. Transfer pork to a baking sheet and generously season with salt. Refrigerate for six hours. Remove from fridge and dice. Fill a large saucepan with about four inches of oil. Working in batches, fry pork until brown. Let drain over paper towel-lined plate. Serve immediately with rice vinegar.
