  • 3 Tbs. light brown sugar
  • 2 tsp. hot paprika
  • 1 tsp. mustard powder
  • 1/2 tsp. ground cumin
  • Sea salt and pepper
  • 1 (3-4 lb.) boneless pork shoulder, fat trimmed
  • 2 tsp. vegetable oil
  • 1/2 C. apple cider vinegar
  • 3 Tbs. tomato paste
  • 6 buns
  • Barbecue sauce and coleslaw, for serving

In a bowl, combine 1 Tbs. brown sugar, paprika, mustard powder, cumin, 2 tsp. salt, and 1/2 tsp. pepper. Rub the spice mixture over the pork. In a large skillet, heat the oil and add the pork. Brown on all sides, about 5 minutes. Remove the pork and whisk 3/4 C. water to the drippings in the skillet. Transfer the liquid to a crockpot. Add the vinegar, tomato paste, 2 Tbs. brown sugar, and 2 C. water. Whisk to combine. Add the pork, cover, and cook on low for 8 hours.

Remove the pork and roughly chop. Strain the liquid into a saucepan and bring to a boil. Cook for 10 minutes, or until the liquid is reduced by half. Season with salt to taste. Put the meat in a large bowl and mix with 1 C. cooking liquid. Add salt and vinegar to taste.
