Savory Salmon Broccoli Quiche

- 140 g. cooked salmon fillet, cut into cubes
- 3 T. light mayonnaise
- 1 bag of broccoli, frozen
- 1 frozen pie crust
- 1/3 C. mozzarella cheese, shredded
- 2 eggs
- 150 mL. milk
- 1 onion, finely chopped
- 1 garlic, chopped
- black pepper
First preheat your oven to 375 degrees Fahrenheit and allow your pie crust to defrost for about 15 minutes.
Heat two tablespoons of mayonnaise in a pan and add the onion, garlic, and broccoli. Cook for five minutes, and stir often until softened.
Now pour the broccoli mixture and salmon chunks into the pie crust, sprinkling cheese on top.
Combine the eggs and milk and season the mix with pepper. Stir in the leftover tablespoon of mayonnaise. Pour this mixture over the vegetables and cheese. Bake in the oven for 25 minutes.
