  • 1 lb. Italian sausage
  • 1 lb. Italian bread
  • 2 yellow medium onions, chopped
  • 4 celery stalks, sliced
  • 2 ½ C. chicken broth
  • 6 Tbs. butter
  • ½ C. Sauvignon Blanc white wine
  • 2 eggs, beaten
  • ½ C. parsley, chopped
  • 3 Tbs. sage, chopped
  • 1 Tbs. olive oil
  • Salt and pepper

Prepare the bread a day before making this recipe. Tear into pieces and let it dry out overnight. Heat a large skillet on medium-high heat and cook the sausage. Set the meat aside. Melt the butter and add in the onion and celery. Add in the wine and let it simmer for about 3 minutes. Stir in the rest of the ingredients including the bread. Preheat the oven to 325 degrees. Cover the casserole with foil and bake for 20 minutes. Take the foil off and bake for another 20-30 minutes.
