Savory Seafood Stuffing

A great stuffing for any mild seafood or fish. The taste isn't overwhelming but gives whatever you stuff it in a truly wonderful taste. You know you're eating seafood. It isn't really mushy either. This recipe will stuff 2 6-8-oz. fish fillets, 2 lobster tails or 2 dozen shrimp or calamari.

Ingredients

  • 1/2 C. panko bread crumbs
  • 1 egg
  • 3 Tbs. mayonnaise
  • 1 tsp. Old Bay seasoning
  • 1 Tbs. fresh parsley
  • 1 stalk celery, very finely chopped (or 1/2 tsp. celery seed)
  • 2 green onions, finely chopped
  • 1/2 tsp. dill (or 1 Tbs. fresh dill)
  • 4 lg. scallops, finely chopped
  • 6 lg. shrimp, finely chopped
  • 1/2 can shredded crab meat

Directions

Mix crumbs, egg and mayonnaise together. Then add the rest of the ingredients. Refrigerate overnight. Taste to see if anything else may be needed (like salt).Stuff whatever you want. This is great with cod or sole. I add butter and lemon juice when I bake them.
