This fall dish works great as a simple side or even a full meal! Enjoy tender bites of harvest squash that have been sauteed and deliciously seasoned mixed with wild rice and black beans.

  • 3 C. butternut squash, cubed
  • 1 shallot, minced
  • 2 cloves garlic, minced
  • 1 T. olive oil
  • 2 C. instant wild rice, cooked
  • 1 can black beans, rinsed and drained
  • 2 T. lime juice
  • 1 tsp. paprika
  • ½ tsp. cumin
  • Salt and pepper to taste
  • Parsley for garnish

In a large skillet, heat oil and sauté shallot and garlic until fragrant. Add butternut squash, cover, and cook until tender, stirring occasionally. In a large bowl, combine rice, beans, lime juice, paprika, cumin, salt, and pepper. Stir in cooked squash and serve with fresh parsley.
