  • 1/2 C. low-fat cheddar cheese, grated
  • 1/2 C. low-fat mozzarella cheese, grated
  • 1/4 C. low-fat ranch dressing
  • 1 clove garlic, minced
  • 1 pkg. refrigerated crescent rolls
  • 1 Tbs. olive oil
  • 6 oz. baby spinach
  • Salt and pepper, to taste

Preheat the oven to 400 degrees. In a large skillet cook the garlic in olive oil over medium heat. Add the spinach and toss until it is cooked and shrinks down, about 4 minutes. Salt and pepper to taste and set aside. In another bowl add the cheeses, ranch, and cooked spinach and mix until combined. Unroll the canned dough and separate into four rectangles. Spread the spinach mixture evenly over the rectangles and roll them up. Cut each roll into slices and arrange them on a cookie sheet. Bake for 15 minutes until golden-brown and melted. Cool before serving.
