These delicious Asian inspired meatballs are a great way to use red and orange peppers. This recipe is great by itself or served over a bed of rice.

  • 20 frozen turkey meatballs
  • 2 Tbs. oil
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 C. chicken stock
  • 1/2 C. pineapple juice
  • 3 Tbs. rice vinegar
  • 1 Tbs. soy sauce
  • 1 Tbs. ketchup
  • 1/4 C. brown sugar, packed
  • 2 Tbs. cornstarch
  • 1/4-1/2 tsp. crushed red pepper flakes

In a large pan, heat the oil and place the meatballs in the pan. Cook the meatballs until completely defrosted. Add the chopped peppers and cover. Cook for 3 to 5 minutes. For the sauce, get a medium bowl and combine the chicken stock, pineapple juice, vinegar, soy sauce, ketchup, brown sugar, cornstarch, and red pepper flakes. Whisk until combined completely. Add the sauce to the pan with the meatballs and stir. Cook over medium heat for 7 to 10 minutes, stirring occasionally.
