  • 12 Yukon Gold Potatoes
  • 3 Cups of Shredded Mozzarella Cheese
  • 3 Cups of Shredded Cheddar Cheese
  • 3 Tablespoons of Vegetable Oil
  • 3 Teaspoons of Garlic Powder
  • 2 Teaspoons of Parsley
  • 1 Teaspoon of Salt
  • 1 Teaspoon of Pepper

To begin, preheat your oven to 400 degrees Fahrenheit and peel your potatoes.
Soak the potatoes in a large bowl full of ice cold water for 30 minutes, then drain and pat them dry. Mix together the vegetable oil, garlic powder, salt, and pepper in a bowl and coat each potato in a generous amount of the mixture. Then, place the seasoned potatoes on a cookie sheet lined with parchment paper and bake until they’re browned -- around 20 minutes.

While the potatoes are still hot, sprinkle the cheeses over them until they’re completely covered and place them back in the oven for around 5 minutes. After that, top them off with parsley and serve them hot!
