  • 1 package active dry yeast
  • 3 cups flour
  • 1 ¼ cups warm water
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 stick of butter
  • 2 cans crushed tomatoes
  • 1/3 cup cooking sherry
  • 1 ¼ cups olive oil
  • ½ cup romano cheese
  • ¼ cup chopped parsley
  • 1 onion, diced
  • 1 tablespoon minced garlic
  • 2 cups shredded mozzarella
  • 1 sausage of dry cured pepperoni

Preheat oven to 550 degrees. Start with the dough, sift together yeast, flour, salt, and pepper. Mix in the water and butter and stir until everything is combined. Knead for 10 minutes and transfer to a floured bowl and cover with a damp towel. Let it rise for 1 hour or so.

While the dough is rising, work on the sauce. Heat the olive oil in a large skillet over medium heat. Saute the onion and garlic, and once they are browned, deglaze the skillet by adding sherry. Mix in the parsley and continue stirring. Add in the tomatoes and Romano, and 1 tomato can’s worth of water. Reduce to a simmer and allow it to simmer covered for 1 hour.

Once the dough is fully risen and the sauce is ready, roll out your dough on a floured surface. Spread the sauce in the middle and sprinkle the cheese evenly on top. Slice the pepperoni and sprinkle those throughout the pizza. Place your pizza on a pizza stone and cook for 10 minutes, rotating halfway through. Serve after cooling for 2 minutes.
