Scallop Salad

Though this isn't the traditional way to eat scallops, it's delicious and light!

Serving Size / Yield

3-4 servings

Ingredients

  • 1 lb. lg. sea scallops, rinsed
  • olive oil
  • 2 Tbs. lemon juice
  • pepper
  • salt
  • 2 Tbs. chopped basil
  • 1 Tbs. chopped mint
  • 2 lg. tomatoes, cut into bite-size pieces
  • 6 C. salad greens, torn into bite-size pieces

Directions

Heat a grill pan over medium-high heat until a drop of water sizzles when dropped. Brush pan with olive oil. Pat scallops dry and place them on the grill pan. Cook until they are lightly browned. Should take about 2 minutes. Turn scallops and cook until browned, another 1-2 minutes. In a large bowl, whisk together lemon juice and 3 Tbs. olive oil. Add scallops and toss. Let sit for 5 minutes. Add herbs and tomatoes to the scallops and stir. Arrange greens on serving plates. Top with scallop mixture and serve.
