Scalloped Potatoes and Spinach
Ingredients
- 1 10-oz. pkg. frozen spinach
- 8 slices bacon, fried
- 8 oz. shredded Swiss cheese
- 1 box instant scalloped potatoes
- 1 med. onion, chopped
Directions
Mix scalloped potatoes as directed on box. Saute the onions in 2 Tbs. bacon grease. Add the spinach and heat through. Crumble the bacon and add it to the onion mixture. Add to the potatoes and mix well. Bake at 350 degrees for 25 minutes. Remove from oven and sprinkle with the cheese to cover. Return to oven and bake until cheese is melted.
