Ingredients

  • 4 Tbsp. butter
  • 1/2 yellow onion, diced
  • 1/3 C. flour
  • 1 1/4 C. half-and-half
  • 1 1/2 C. milk
  • 1 tsp. black pepper
  • 2 lb. russet potatoes
  • 3 C. diced cooked ham
  • 2 C. grated Monterey Jack cheese
  • 2 green onions, chopped

Melt the butter in a skillet. Cook the onions for about 3 minutes and sprinkle the flour on top. Cook another 2 minutes and add the half-and-half and milk. Stir until the mixture thickens, about 3 minutes. Season with the pepper and reduce the heat. Slice the potatoes thinly and add half of them to a crockpot. Add half the diced ham and sprinkle on half the cheese. Pour on half the sauce and repeat with the rest of the ingredients. End with cheese and sauce. Season with extra pepper and cover. Cook on low 4 hours until the potatoes are tender. Garnish with green onions.
