Scrambled Egg Burritos

These breakfast burritos have fresh cilantro and red pepper flakes to really wake up your taste buds in the morning.

Ingredients

  • Nonstick cooking spray
  • 1 red bell pepper, chopped
  • 5 green onions, sliced
  • 1/2 tsp. red pepper flakes
  • 5 eggs, beaten
  • 1 Tbs. chopped fresh cilantro or parsley
  • 4 8" flour tortillas
  • 1/2 C. shredded low sodium, reduced ft Monterey Jack cheese
  • 1/2 C. salsa

Directions

Spray medium nonstick skillet with cooking spray. Heat over medium heat. Add bell pepper, green onions and red pepper flakes. Cook and stir 3 minutes. Add eggs to vegetables. Reduce heat to low. Cook and stir 3 minutes or until set. Sprinkle with cilantro. Stack tortillas and wrap in paper towels. Microwave at high 1 min. or until hot. Place 1/4 of egg mixture on each tortilla. Sprinkle with cheese. Fold sides over to enclose filling. Serve with salsa.
