Scrambled Tofu
Ingredients
- 1 Tbs. vegetable oil
- 3 Tbs. thinly sliced scallion or onion
- 10 oz. boxed silken tofu
- 1/4 tsp. turmeric
- Salt and freshly milled pepper
Directions
Heat the oil in a small skillet, add the scallion, and saute over medium heat until soft, 2 or 3 minutes. Crumble in the tofu and add the turmeric. Season well with salt and pepper and cook over high heat, stirring frequently, until the curds have firmed up and are heated through.
